Cioccolata in tazza - Home made chot chocolate

40gr cioccolato fondente spezzettato
vaniglia o altra spezia per dare sapore
1 cucchiaio di fecola o amido di mais
1 cucchiaino di zucchero di canna
1 cucchiaio cacao amaro in polvere

I'm confused about Christmas time. Sometimes I'm so crazy about city lights, walking in the city center holding you hand and shopping, meeting friends for a glass of wine. But most of the times, when it comes Christmas eve I feel a little bit sad... maybe because it's so dark and cold outside and I can't stand to be dark at 4pm. It drives me crazy and makes me feel so blue.
But I've got a great remedy for Christmas sadness (I'm sure I'm not the only one to feel like that!right???!!!). Take a big mug, warm milk and add cocoa powder. Here it is my remedy
perfect combination with cookies home made

Hot chocolate home made
1 glass milk
40gr dark chocolate, cut into chinks
vanilla extract (but you can add cinnamon or even chili)
1 tsp brown sugar
1 Tbs Dutch cocoa powder
1 tsp corn starch

Put the milk into a small saucepan, add the chocolate drops and mix well. Add the sugar and the starch, combine and let them melt slowly.
Add vanilla extract, or your favourite spice, add cocoa powder and let the milk boil slowly until it becomes thick as you like.
Serve with fresh whipped cream and a little bit of cinnamon on top of it.
Enjoy it in the afternoon, with you love or even alone, you really deserve it!

Mini souflé

sabato 20 dicembre 2014

Here we are, Christmas is coming and what's the best way to celebrate?
Of course finishing my master course it's a great way nut...no no wait! It's far much better to wake up on Monday morning (which you know it sucks), go to the office being happy after the weekend and.... get fired!
Yes, fired. take your things and leave this place. WTF? Are you kidding me man, really are you serious?
Couldn't believe this man...younger than me, with no idea about marketing or business was telling me this huge amount of...shit! Yes, sorry but I really must say shit!
Ok, thank you so much. You suck and your company is gonna fail honestly. Bye bye and good luck.
So that's it...how my week has gone...not bad uh? Jobless, almost homeless...what else?
Great...
So as now I am jobless what's the best way to spend my days? cooking! Exactly. So I've tried this mini potatoes cake with feta cheese but you can try with gouda or better with blue cheese, crispy bacon or whatever do you like to add for extra flavour.
For 4 servings:
4 medium potatoes
feta cheese
milk
1 beaten egg
salt n pepper
nutmeg grated

Boil the potatoes and then mash them with a fork, add the beaten egg, feta cheese diced and adjust with salt n pepper.
Add nutmeg if you like the flavour or simply put chopped fresh parsley.
Add slowly a little bit of milk and whisk together. Put this mixture in 4 baking tins and bake for 20' to 150°C then put the oven to 180°C and bake until golden brown.
Serve with ham and cheese or with some slices of crunchy bacon.
Enjoy your days with your special people, eat and drink and....fuck the rest!

Carrot cake home made - Torta con carote e cannella

1 cucchiaino bicarbonato
1 cucchiaino noce moscata
2 cucchiaini cannella in polvere
1 cucchiaino sale
2 cucchiaini vaniglia in semi
1 vasetto di purea di mela
1 tazza zucchero di canna (io 1/2 tazza)
2 tazze carote grattugiate (circa 6 carote medie)

This 2014 has been a crazy crazy year and it's coming to an end in a few weeks! New projects coming and a new interested in the food field (you'll see in a while the changes here on the blog).
Last weekend I was at home again, back to my parent's house and I decorated the huge Christmas tree, mum baked pies and I tried this new healthy and vegan version of my favourite cake: carrot cake with almond milk.
It's easy, healthy, tasty and full of spices which drive me crazy as I'm addicted to cinnamon!
Try it on Christmas holidays, for a special tea time with your best friend or on a Sunday mornining with your love!

Pochi ingredienti grande risultato!

Ingredienti per una teglia piccola:
2 mele golden
300gr farina (200 integrale, 100 0)
1 bustina lievito (io 1 cremor tartaro)
zucchero canna 140gr (io 100)
latte soia 120ml
olio semi 120ml
cannella qb

In una ciotola mescolate farina, lievito e zucchero. Aggiungete il latte a temperatura ambiente e l'olio. Mescolate bene.

Honestly I can't wait for Christmas to come this year. It was a very good one: master is over and the final project about food diplomacy was so amazing for me! I travelled in the U.S.A, back in Greece, met a great group of people from al over the world. Gave up a job I hated, found a new one and I can say that I am definitely happy right now!
Ok this new job sometimes is really frustrating but it's normal, that's life.
Can't wait to be home for a couple of days, relax, bake cookies and cupcakes with mum, read books under the Christmas tree and then... travel for New Year's eve!
Also I'm enjoying week ends at home, really need to relax, eat properly something warm and spend some time with a special person. Even in sometimes I'd rather go for a walk or a mini city tour but you know, winter makes me sooooo lazy ahahah :)
So on Sunday morning I love to bake those amazing fruit cakes for breakfast. This one is soooo good, healthy and tasty, with apple and raisins, cinnamon and it's so moist and delicious that you won't believe it's vegan!
Here it is!

Ingredients for a loaf pan
300gr whole wheat flour (or use 100 wheat and 200 whole)
3 tsp baking powder
2 apples ( 1 1/2 cut into chunks, the other 1/2 into slices)
140gr brown sugar
120ml soy milk (or other veg one)
120ml sunflower oil
cinnamon

Simply mix the dry ingredients into a bowl: flour, baking powder and sugar, and cinnamon,
Slowly add milk at room temperature and oil. Add the cut apple and combine well.
Put the mixture into a loaf pan and decorate with apple slices.
Bake in preheat oven at 180°C for 40-45'.

It's perfect with lemon custard or vanilla ice cream, for breakfast or for a tea break in the afternoon.
Enjoy!

**Sorry, no pics for it because I've broken my cell phone and everything was in that :(

Pere e cannella - Pear&cinnamon loaf cake

domenica 2 novembre 2014

Come da buona abitudine no latte, no uova e no burro ma spezie e tanta frutta buona!
Ecco come si fa.
Ingredienti per un cake
1/2 tazza olio di girasole
2/3 tazza zucchero di canna (io ne ho messo 1/2 scarsa)
2 cucchiaini di semi di vaniglia
1/2 tazza latte di mandorla (io soia)
1 + 1/2 tazza farina integrale
2 cucchiaini lievito per dolci
1 cucchiaino cannella in polvere
1 + 1/2 pera tagliata a cubetti

Servite e gustate :)

Lasagne salmone e zucchine - Lasagne smoked salmon and zucchini

lunedì 27 ottobre 2014

Domenica...relax, parco, mercatini vintage, gelato, mostre.
Pochi ingredienti e via
per 6 porzioni
lasagne verdi/gialle secche
1 panna cucina di soia
150gr salmone affumicato
2 zucchine medie
sale e pepe qb

English Version:
Sunday Sunday...such a lot of thing to do in Milan: have a walk in the park, visit an art exhibition, go to a flea market. That's one of the first positive impressions I had one year ago when I moved here: people go out a lot, every day, every week even if it's cold outside they don't stop. Families with children biking, friends chatting in a cafè. Such a live city! Whereas in Bologna life seems so slow and sleepy.
Yesterday was one of those days: sunny but a little bit cold, a lovely Sunday with friends at a sushi bar, a walk in the park and a vintage market along the Navigli district.
But Sunday means also relax and yes, cooking! So yesterday I baked my beloved lasagna but a little bit different: smoked salmon and zucchini. Delicious and perfect to store in the refrigerator for a last minute dinner or after a terrible day at work.
Ready in 30'
For 6 servings:
dry lasagna yellow and green
2 zucchini
150gr smoked salmon
salt n' pepper
soy cream and a glass of soy milk

It's so easy: cut the zucchini into round slices, put them into a frying pan with a little bit of olive oil and let them fry for a couple of minutes. Add a glass of hot water and let them cook for no longer than 10'.
Add the soy cream and mix well with a spoon. Set aside and cut the smoked salmon into thick slices. Into a baking pan put a first layer of lasagna, dry and uncooked, add a spoon of the zucchini-cream mixture and some slices of salmon. Continue in this was in order to fill the pan up to its top. If it's too dry and you don't have enough cream put a glass of soy milk in order to moist the pasta layers.
Put the pan into oven and cook at 180°C for 30'. Check with a fork if the lasagna are now moist and cooked.
Let them cool for half an hour and then serve with a little bit of parsley :)
Enjoy!
