Polenta croccante - corn mush

Ci sono svolte nella vita. Alcune dipendono dalla città in cui sei, le persone che frequenti, il lavoro che svolgi o vorresti svolgere. 
Diciamo che questo è il periodo delle svolte, circondato da insicurezza ma la strada almeno è più chiara. Il cammino sarà lungo ma serve iniziare da qualche parte!
E questa improvvisa saggezza è venuta dopo un week end di alti e bassi dove il morale a terra si è alternato con una più saggia e decisa presa di posizione. Rimbocchiamoci le maniche ed iniziamo questo cammino. 
Ci saranno svolte sul blog e non solo di contenuti, di grafica, non solo ricette ma anche viaggi e recensioni sempre più presenti. Ho deciso che questo 2015 sarà un anno senza confini, senza barriere, senza "forse", in tutti i campi; quando avrò voglia di dire qualcosa via libera: lavoro, sentimenti, amici. Basta trattenersi, che poi ad un certo punto fai BOOM!
Quindi via anche agli esperimenti come questa cena improvvisata sabato sera in cui ero sola a casa. Avevo della polenta fredda da pranzo. Che farci? Di certo non friggerla. Uhm vediamo
Ingredienti
polenta fredda (c.a 100gr)
1 pera
1 noce burro
sale e pepe
parmiggiano (o ancora meglio blue cheese)

Tagliate la polenta a fette spesse circa 1cm. Scaldate la bistecchiera per bene e fate grigliare i vostri crostini. Nel frattempo tagliate una pera a fette sottili e fatele prendere colore in una padella con una noce di burro, aggiungete sale e pepe.
Quando la polenta sarà ben grigliata prendete i crostini, mettetevi sopra una fetta di pera e del grana a scaglie.
Passate qualche minuto sotto il grill del forno per far sciogliere il formaggio.

Possono essere anche un delizioso finger food per i vostri aperitivi.

Sometimes you just wake up one day and realize that what you really wanna do is not what you're doing now: work, life, love, city...sometimes everything seems like an enemy.
So you just have to stop, think about what really but REALLY makes you happy! In my case this wise decision came after a strange week end where blue feelings left and an unexplained peace came suddenly after so many tears. Maybe it was just the right time to explode and tell everything. So I made a decision: 2015 will be a limitless year: no fears, no limits, no boundaries.
So here we are, this is what I've had for dinner on Saturday evening. Home alone I just relaxed, put some good jazz music on and grilled this corn mush I had from the previous day.
It's easy,tasty, Parmiggiano goes perfectly well with caramelized pears and black pepper.

Ingredients
100gr cold corn mush cut into slices (1inch)
1 ripe pear
1 tbs butter
salt & pepper
parmiggiano cheese (or blue cheese for extra flavour)

Put the slices of corn mush on your grill. In a frying pan melt the butter and put the pear cut into slices. Let it cook for a while until golden brown, add salt and pepper.
Take your slices, put on every one a slice of pear and a thin slice of parmiggiano cheese.
Put under oven grill for about 3' just to let the cheese melt.
Enjoy with a glass of white wine!

Io non ho mai odiato il lunedì mattina. Sempre considerato un giorno come un altro, arrivi al lavoro o a scuola ed è solo l'inizio della settimana dicevo.
Ma poi arriva questo lunedì. Scendo dalla metro, guardo il Castello di Milano e penso quanto è bella sta città, penso a te che stai andando al lavoro in bici e penso "che figata, venerdì mi sono laureata col massimo dei voti al master!" e penso anche alla nuova casa che sto cercando per andare a  vivere da sola.
Oh e quando tutto sembra troppo perfetto per essere vero che succede? Ti crolla tutto intorno. E lunedì? Beh si poteva iniziare la settimana prima di Natale in un modo di merda?! Consentitemi merda dai!
Arrivo al lavoro e....uhm strana tensione si respira. Penso "oh dai fatemele le congratulazioni per la laurea"...ma niente...
Mi chiama a rapporto il super capo - che è più giovane di me, capirete voi - e mi lancia una lettera di licenziamento in tronco "perchè a livello personale non posso tollerare certe cose e non ti posso neanche lasciar finire il periodo di prova". Ora, ammesso e non concesso che puoi anche aver ragione, ma che fai mi licenzi perchè ti sto sulle palle personalmente? Strano perchè non ci sei mai...uhm ma il bello è che mi licenzia perchè io ho avuto da ridire col suo leccapiedi. Beh sai che ti dico? Che ti sei comportato una merda ma grazie, alla fine mi hai fatto solo un favore ragazzino viziato.
Così mi ritrovo ad una settimana dal natale a dover ricomporre i pezzi di un puzzle che sembra non trovare fine. E un pò ti assale il panico...e ci si chiude in cucina. Come l'altro giorno in cui ho cucinato e sperimentato anche questi tortini di patate un pò così, last minute e anche ricicla avanzi.
Per 4 tortini
1 uova
4 patate medie lessate
sale e pepe
noce moscata qb
1/2 bicchiere di latte
feta sbriciolata

Super veloci e per tutti: lessate le patate a lungo, sbucciatele e schiacciatele grossolanamente con una forchetta. Aggiungete la feta sbriciolata, l'uovo sbattuto, sale e pepe. Se vi piace grattate anche un pò di noce moscata o del prezzemolo tritato grossolanamente. Se necessario amalgamate con il latte versato a filo.
Ungete o imburrate 4 stampini mono uso e versatevi il composto. Cuocete per 20'-30' a 150°C alzando negli ultimi dieci minuti a 180°C per farne colorare la superficie.
Serviteli caldi con un tagliere di salumi o con una selezione di formaggi. A voler esagerare fate diventare croccante del bacon e servite su una fonduta di formaggio zola.

Yes, fired. take your things and leave this place. WTF? Are you kidding me man, really are you serious?
Couldn't believe this man...younger than me, with no idea about marketing or business was telling me this huge amount of...shit! Yes, sorry but I really must say shit!
Ok, thank you so much. You suck and your company is gonna fail honestly. Bye bye and good luck.
So that's it...how my week has gone...not bad uh? Jobless, almost homeless...what else?

So as now I am jobless what's the best way to spend my days? cooking! Exactly. So I've tried this mini potatoes cake with feta cheese but you can try with gouda or better with blue cheese, crispy bacon or whatever do you like to add for extra flavour.
For 4 servings:
4 medium potatoes
feta cheese
milk
1 beaten egg
salt n pepper
nutmeg grated

Boil the potatoes and then mash them with a fork, add the beaten egg, feta cheese diced and adjust with salt n pepper.
Add nutmeg if you like the flavour or simply put chopped fresh parsley.
Add slowly a little bit of milk and whisk together. Put this mixture in 4 baking tins and bake for 20' to 150°C then put the oven to 180°C and bake until golden brown.
Serve with ham and cheese or with some slices of crunchy bacon.
Enjoy your days with your special people, eat and drink and....fuck the rest!

Curry di verdure - veg curry and the day after

Ah i pensieri nel cuore della notte. Ti svegli e ti chiedi se hai sognato e ti resta una sensazione addosso che non sai spiegare...
Sarà il periodo di indecisione ed incertezza, sarà l'arrivo dei primi freddi ma a volte vorresti solo stare in letargo come gli orsetti e svegliarti quando tutto torna a fiorire, spuntano i fiori, l'aria si fa calda. Invece affrontiamo l'autunno milanese e le preoccupazioni che spesso porta con sè. 
Tesi da finire, lavoro da trovare, pensieri da domare. Beh facile che ci vuole...basterebbe mettere il cervello in stand by ogni tanto invece di macinare chilometri al giorno e pensare e riflettere su cose stupide perchè alla fine c'è sempre una soluzione a tutto. Ma tu continui a camminare e pensare...
E per non pensare un ottimo rimedio è cucinare! Tagliare, mescolare, saltare, friggere tutti i rumori che vengono da padelle e tegami sono rilassanti ed ogni tanto mi fermo a pensare - sì anche mentre cucino - che forse dovrei smettere di inseguire strade che non portano a niente e dedicarmi alla vera passione per il cibo e cercar di coinvolgere anche altri in ciò...
E queste riflessioni le facevo ieri mentre preparavo le verdure al curry con ceci e patate. Un modo semplice e veloce di consumare quelle verdure non tanto fresche che stanno lì nella cassetta a guardarvi tristi. Prendetele, tagliatele, saltatele e via! Il giorno dopo ne sono avanzate?
Mica si buttano! No. aggiungete riso thai e via il pranzo è pronto in 15' :)

Verdure al curry e riciclo avanzi
Per 2 persone
1 zucchina media
1 scatola ceci cotti
2 carote medie
2 patate grandi
2 cucchiai curry mix in polvere
1 peperoncino habanero 
acqua calda



Semplicissimo: tagliate tutte le verdure a tocchetti e fatele saltare in padella con un filo di olio e.v.o, aggiungete il curry in polvere ed il peperoncino (a vostro piacimento, attenzione perchè l'habanero è uno dei più piccanti che ci sia!). Unite i ceci che avrete risciacquato sotto acqua corrente. Quando le spezie iniziano a cambiar colore aggiungete acqua calda e coprite. Fate cuocere circa 30' finchè le verdure non sono cotte.
Servite come contorno o piatto unico. Il giorno dopo aggiungete del riso basmati e servite caldo con un filo di olio. Et voilà, verdure salvate, portafoglio ringrazia e niente sprechi!





Green curry and the leftovers

Ah thoughts...you woke up in the middle of the night thinking...about what? About life, love, work...this unbalanced balance that you try to manage so hard and nothing seems easy anymore.
Thoughts...a good way to stop them is definitely cooking: cutting, stirring, frying every noise in the kitchen is so relaxing. But then...yes I start thinking even while cooking, I know it's totally insane but I cannot help it. Sometimes instead of chasing something so hard to find I simply stop and think that maybe yes I got to find my way in the food world: share this insane passion with others, share new flavours and believe in the power of food.
Maybe I'll find my way.
While I was thinking yesterday I cooked this amazing vegan curry made with the sad old veggies stored in the kitchn: potatoes, zucchini, chickpeas and carrots. Simple, you cut them, fry with curry powder and the next day the leftovers are perfect with basmati rice. Low cost, vegan, healthy and simply delicious!

2 Servings:
2 big potatoes
1 zucchini
1 can boiled chickpeas
1 habanero chili (be careful)
salt n pepper
2 Tbsp curry powder
hot water

As I said simply cut the veggies into big chunks, put them into a frying pan with a little bit of olive oil and let them fry for a while. Add the chickpeas and the curry powder. Add the habanero chili, I put just a slice of it because it's one of the most dangerous you can find, really hot!
Add boiling water and let the veggies cook slowly for aproximately 30-35'.
Serve as side and the next day if you have any leftovers simply put some basmati rice and serve it warm. To make it more tasty you can add a little bit of plain greek yoghurt and serve it with pita bread ;)
Easy, low cost, the veggies are safe and not wasted and I'm sure you'll smile (and stop thinking).

Rieccoci. Inizia l'autunno, appena arrivato si fa già sentire con venti gelidi, così freddi che vorresti solo stare sotto le coperte a vedere un film o bere una cioccolata calda.
Autunno tempo di bilanci come al solito, sì perchè io non li faccio a fine anno ma a metà. Così, ogni tanto mi fermo e penso a come vanno le cose. E come vanno...beh come al solito come un'altalena perchè se non le complico non sono contenta.
Perchè lasci un lavoro, perchè lasci casa e ne devi trovare una nuova..poi però ci sono cose speciali e persone speciali che ti fanno riflettere su come la vita non deve essere per forza una montagna russa per essere completa ed appagante.
E ti fermi. Ti prendi tempo. Riscopri che andare ad un mercato e parlare coi contadini è piacevole, che il pescivendolo ti regala un pesce perchè ti vede triste, riscopri i negozianti del tuo quartiere che ti fanno provare il nuovo gelato, scopri nuovi bar e la cordialità dei gestori.
Vedi tutto diversamente se rallenti e diventi più slow e magari anche più happy e se anche fa male poi devi ringraziare chi ti fa sbattere la testa ma poi con un sorriso ti fa capire certe cose importanti.
E nella filosofia slow dell'autunno ci sono le zuppe, comfort food che ti appagano la sera quando torni ed hai il freddo di Milano addosso. Zuppa di zucca per rispettare la stagione, low cost, super nutriente e facile anche per i più negati in cucina: cuoci, frulla e servi!
Per 2 porzioni:
2 patate pasta gialla
1/2 porro
400gr di zucca mantovana
olio e.v.o
acqua calda o brodo vegetale
sale e pepe qb
un pizzico di curry

Mettte in una pentola le verdure tagliate a tocchetti, fate rosolare con un filo d'olio ed aggiungete il curry in polvere. Aggiungete l'acqua calda o il brodo vegetale e fate cuocere per circa 20-30'.
Togliete dal fuoco e frullate finchè non sarà vellutata la consistenza.
Regolate di sale e pepe e rimettete sul fuoco per qualche istante. Per renderla più golosa aggiungete un cucchiaio di creme fraiche o di latte.
Servite calda con crostini e godetevela!

Here we are again: falls is coming. In Milan is so cold already, windy and days are getting shorter and shorter day by day. The only thing that you really want is to get back home and relax on the sofa, watching movies or drinking hot chocolate.
Falls is also the moment of the year when you stop and try to make a balance of the past months...positive but with a lot of changes and yes, you know, great changes are always preceded by chaos: you give up your work, then you want to change house and you're searching for a new flat and room mate. But then something and someone makes you stop and think that life doesn't need to be a roller-coaster to be happy and exciting. So you stop.
And you start to think about life, you discover once again the pleasure of shopping at the market, you speak with the farmers and you stop for a croissant in a new cafè in your neighbourhood...life seems so special if you enjoy the little moments.
And if you want to enjoy a good meal at evening, after the whole day at work you just close the door and leave the world outside and enjoy this warm and spicy pumpkin soup.

Ingredients for 2 servings
2 potatoes
1/2 leek
boiled water or vegetable stock
400gr butternut squash
1 tsp curry powder
extravirgin olive oil
salt and pepper

Simply put a little bit of olive oil into a pot and put the vegetables cut into chinks and let them fry for a few seconds. Add the water or vegetable stock and let them boil for 20-30'. When the vegetables are ready simply blend them with a hand blender. Put once again on fire for a few seconds and stir it. If you want you can add a table spoon of creme fraiche or milk just to make it richer and smother.
Enjoy with warm garlic flavoured croutons!
