Carrot cake home made - Torta con carote e cannella

Appena tornata a Milano dopo un bel week end lungo a casa!
Alberi di Natale, luci, giri in centro, tesi finita... questo 2014 sta proprio arrivando alla fine. Un bel pò di cambiamenti sono in arrivo e le giornate sono frenetiche.
Per fortuna ci sono i week end a casa, dove la mamma ti coccola e ti fa trovare torte pronte e la casa calda! E ci sono anche i pomeriggi in cui si infornano torte per accompagnare una tazza di caffè. Questa di oggi è una torta di carote, leggera, senza burro, senza uova, senza latte... sì è vegana anche questa.
Le carote grattugiate stanno da dio con cannella e mandorle, ma potete anche aggiungere del succo d'arancia come nelle famose merendine che vendono al supermercato, ma con un gusto più sano e naturale. Si conserva una settimana avvolta da carta assorbente e messa in frigo, è ottima con una crema al formaggio spalmabile ma anche così con una tazza di caffè nero.
Facile, veloce, e con pochi ingredienti che tutti hanno in casa e non serve la bilancia.

Ingredienti per 12 porzioni:
2 1/4 tazze di farina (io farina 0)
3 cucchiaini lievito per dolci
1 cucchiaino bicarbonato
1 cucchiaino noce moscata
2 cucchiaini cannella in polvere
1 cucchiaino sale
2 cucchiaini vaniglia in semi
1 vasetto di purea di mela
1 tazza zucchero di canna (io 1/2 tazza)
2 tazze carote grattugiate (circa 6 carote medie)
1/2 tazza olio di semi
1 tazza latte di mandorla non zuccherato

Come in tutte le preparazioni anglosassoni mescoliamo gli ingredienti secchi: farina, lieviti, spezie e sale in una ciotola. Aggiungiamo poi l'olio, il latte di mandorla ed infine le carote. mescoliamo bene e come tocco mio personale ho aggiunto una manciata di granella di mandorla.
Mescoliamo bene e versiamo in una teglia e cuociamo in forno ben caldo a 180°C per circa 1 ora controllando con uno stuzzicadenti.

This 2014 has been a crazy crazy year and it's coming to an end in a few weeks! New projects coming and a new interested in the food field (you'll see in a while the changes here on the blog).
Last weekend I was at home again, back to my parent's house and I decorated the huge Christmas tree, mum baked pies and I tried this new healthy and vegan version of my favourite cake: carrot cake with almond milk.
It's easy, healthy, tasty and full of spices which drive me crazy as I'm addicted to cinnamon!
Try it on Christmas holidays, for a special tea time with your best friend or on a Sunday mornining with your love!
Ingredients for 12 servings: 
  • 2¼ cups flour (I used half spelt, half cake flour)
  • 3 teaspoons baking powder 
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • ½ teaspoons nutmeg
  • 1 teaspoons salt
  • ½ cup applesauce
  • 2 teaspoons vanilla
  • 1 cup cane sugar
  • ½ cup (melted) coconut or canola oil
  • 2 cups grated carrots (just shy of 1lb)

Preheat oven to 180°C and grease a baking pan. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
In a separate bowl, whisk together the applesauce, almond milk, vanilla, sugar and oil. Mix the dry ingredients into the bowl with the wet ingredients. Fold in the carrots and stir until just combined.
Bake for 50-55 minutes or until a toothpick comes out clean.

Torta rustica alle mele - country apple pie

Mamma mia che periodo frenetico: nuovo lavoro, in cerca di casa, la tesi da presentare, laurea del master...insomma, corri corri e non hai mai tempo per te o per chi conta.
Poi arrivano i week end, vorresti fare gite, mostre, andar fuori città ma alla fine ti rintani nel letto al caldo. E cucini finalmente, dopo una settimana passata a mangiare un boccone qui e là con la tua collega che è il tuo grande supporto dell'ultimo periodo.
Meno male le vacanze di Natale sono alle porte e si pensa già a come passarle con la famiglia. Viaggi e cene in programma ti fanno dimenticare i guai sul lavoro.
E mentre cerchi hotel, voli, treni, appartamenti e ti perdi a sognare mete lontane o fighe romantiche accendi il forno, mescoli spezie e farina et voilà la torta per la domenica mattina.
Una torta grezza la chiamo io, con le mele e l'uvetta (ma ottima anche con pere e ciocco o con i canditi penso), farina integrale, cannella che profuma l'intera casa.
In più è anche questa vegan così ne mangi un pezzo in più e male non ti fa, si conserva una settimana in frigo oppure la si può congelare e tirar fuori all'occorrenza.
Pochi ingredienti grande risultato!

Ingredienti per una teglia piccola:
2 mele golden
300gr farina (200 integrale, 100 0)
1 bustina lievito (io 1 cremor tartaro)
zucchero canna 140gr (io 100)
latte soia 120ml
olio semi 120ml
cannella qb

In una ciotola mescolate farina, lievito e zucchero. Aggiungete il latte a temperatura ambiente e l'olio. Mescolate bene. Tagliate le mele a cubetti e una metà a spicchi che userete per decorare. Incorporate la mela e versate l'impasto in una teglia, decorate con le mele a fette. Cuocete a 180°C per 40-45'.
Da provare con un pò di gelato alla vaniglia o con una crema leggera

Honestly I can't wait for Christmas to come this year. It was a very good one: master is over and the final project about food diplomacy was so amazing for me! I travelled in the U.S.A, back in Greece, met a great group of people from al over the world. Gave up a job I hated, found a new one and I can say that I am definitely happy right now!
Ok this new job sometimes is really frustrating but it's normal, that's life.
Can't wait to be home for a couple of days, relax, bake cookies and cupcakes with mum, read books under the Christmas tree and then... travel for New Year's eve!
Also I'm enjoying week ends at home, really need to relax, eat properly something warm and spend some time with a special person. Even in sometimes I'd rather go for a walk or a mini city tour but you know, winter makes me sooooo lazy ahahah :)
So on Sunday morning I love to bake those amazing fruit cakes for breakfast. This one is soooo good, healthy and tasty, with apple and raisins, cinnamon and it's so moist and delicious that you won't believe it's vegan!
Here it is!

Ingredients for a loaf pan
300gr whole wheat flour (or use 100 wheat and 200 whole)
3 tsp baking powder
2 apples ( 1 1/2 cut into chunks, the other 1/2 into slices)
140gr brown sugar
120ml soy milk (or other veg one)
120ml sunflower oil
cinnamon

Simply mix the dry ingredients into a bowl: flour, baking powder and sugar, and cinnamon,
Slowly add milk at room temperature and oil. Add the cut apple and combine well. 
Put the mixture into a loaf pan and decorate with apple slices. 
Bake in preheat oven at 180°C for 40-45'.

It's perfect with lemon custard or vanilla ice cream, for breakfast or for a tea break in the afternoon.

Fried tofu - Tofu con verdure croccanti

Si riparte di corsa, nuove scadenze, nuovi impegni. Milano è così, tutti corrono, dalla mattina alla sera non si fermano, a volte mi chiedo come facciano.
E quando vai di fretta anche i post diventano express come stasera in cui scrivo del pranzo di ieri, e vado al contrario per una volta. Ieri per cena ho raccolto un pò di verdure tristi, insalata e carote, aggiungi qualche seme di sesamo tostato e un panetto di tofu, chili habanero e salsa di soia. Veloce, salva spreco di cibo e salutare. 
Ingredienti
1 panetto di tofu al naturale
insalata avanzata
2 carote
semi di sesamo nero
peperoncino
salsa di soia
mandorle pelate

Molto semplicemente tagliate il tofu a strisce e fatelo friggere qualche istante in padella con un filo di olio e.v.o, aggiiungete le mandorle, il sesamo e il peperoncino. Fate saltare qualche minuto.
Aggiungete anche le carote a strisce e per finire l'insalata intera. Sfumate con un pò di salsa di soia e lasciate appassire le foglie di verdura.

Servite e gustate :)

Fried tofu with crunchy veggies
Running everyday, every moment of the day... Here in Milan people never stop, they go up and down, walking and running. Everyone is so busy! It's insane, from children to old people, everyone!
And when you're in a hurry even the post here becomes express so here is my yesterday's lunch: fried tofu with veggies leftovers.
Simple, delicious and easy to make in 5'.
Ingredients
1 tofu block
2 carrots
leftover lettuce
habanero chili
peeled almonds
soy sauce

Simply cut tofu into chunks and let it fry for a few minutes in a pan with olive oil. Add peeled almonds, the two carrots cut into chunks, chili, black sesame seeds and let them fry for a couple of minutes more. Add in the end the lettuce leaves and in the end the soy sauce.
Easy and fast made for your dinner or lunch! Serve and enjoy :)

La colazione...esiste momento migliore della giornata? Tutto dipende da cosa succede lì, intorno al tavolo della cucina davanti un caffè o latte, con lo yoghurt, i cereali, le torte... poi ci sono quelli che la colazione la saltano o la aggirano come se fosse un ostacolo "prendo solo un caffè" "non ho fame"...dai ma come fai a rinunciare ad un croissant profumato di burro, ad un lungo caffè con il giornale davanti...proprio non vi capisco (ehm sì sì parlo anche di te che fai finta di niente!)
IO AMO LA COLAZIONE
e preparare dolci fatti in casa. Se dunque c'era un periodo in cui sfornavo torte di mele come se fossi in una bakery ora sono molto più tranquilla e mi limito ad un cake ogni tanto, anche per questioni logistiche visto che non ho una vera cucina a Milano e che la mia...beh sarà scarsa 5mq...
Il cake di oggi è delizioso, americano, vegano, costa pochissimo e vi dirò risparmiate non solo soldi ma anche calorie perchè no latte, no uova e no burro ed è preso dal sito BBC good food. E allora che ci metti dentro direte?
Beh ecco qui:
Per 8 porzioni
225gr farina manitoba
3 cucchiaini lievito (io uso cremor tartaro lo trovate in negozi bio)
75gr olio di girasole
3 banane mature
100gr zucchero di canna
50gr gocce di cioccolato
1 cucchiaio cannella

Con una forchetta schiacciate le banane in una ciotola, aggiungete lo zucchero e l'olio. Mescolate bene. Aggiungete la farina setacciata, il lievito, la cannella e le gocce di cioccolato (volendo potete usare altra frutta secca oppure uvetta).
Mescolate bene il composto se troppo duro aggiungete un cucchiaio di latte vegetale.
Mettete in uno stampo da cake e cuocete a 200°C in forno già caldo per 20'. Controllate poi la superficie, se è già dorata coprite con alluminio e continuate la cottura per 40-45' ancora a 150°C
Delizioso appena sfornato, il giorno dopo provate a scaldarlo nel tostapane o a farci merenda davanti ad una tazza di latte o un thè caldo, attenzione crea dipendenza!

Breakfast! OMG I love it so much, what will happen during your day is so connected to the way you get up so starting your routine with a good croissant, your granola yoghurt or your cappuccino is the best way to attract positive karma I think. I truly don't understand those who are alwas in a hurry (yes man I'm also talking 'bout you darling) and simply drink an espresso on the way to the office...
I love so much to sit around my kitchen table  - ok not here in Milan where I don't have a real kitchen - drink my hot american coffee, read the newspaper and eat something delicious.
The cake I baked yesterday is th classic banana bread but this one is simply delicious, moist, low cost and it's vegan so you save money and calories: no milk, no eggs, no butter and it's great so don't feel guilty for having two slices of it in the morning!
For 8 servings:
225gr plain flour
3 tsp baking powder
100gr brown sugar
75gr sunflower oil
50gr dark chocolate chips
3 ripe bananas
1 tsp cinnamon

Preheat oven to 200°C. In a bowl smash the bananas with a fork, add sugar and the sunflower oil. Combine well. Then add flour, baking powder, cinnamon and the chocolate chips, mix well.
Bake in a greased loaf tin for 20' at 200°C then cover it with foil and bake for 40-45' more, check with a toothpick if it's ready.
Enjoy it with your coffee in the morning or with a cup of tea for your afternoon break! :)
