Carrot muffin - welcome back

Tutte le domeniche dico: "oggi aggiorno il blog oggi scrivo un nuovo post". Poi alla fine vince la pigrizia o semplicemente le lavatrici, la tesi o anche solo andare in giro in bici per Milano.
Questa volta ce l'ho fatta! Sono di nuovo a Bologna per una breve sosta e sono tornata ai fornelli. Ieri muffin, oggi lasagne...insomma riscoperta la cucina.
Certo che a Milano in una cucina di 4mq la voglia proprio di sperimentare ricette nuove non mi viene anzi meno sto in casa meglio è.
Periodo di novità su un pò tutti i fronti, chiusa l'esperienza stage nel modo peggiore via verso nuove avventure.
E questi muffin di oggi sono perfetti per festeggiare i "nuovi inizi" (parola che ho usato in modo esagerato nell'ultimo periodo come chi mi conosce avrà notato). Sono soffici, profumati, costano poco e sono l'ideale la mattina con il latte o con il caffè americano, pochi ingredienti, sono la versione modificata che trovate su Facebook alla pagina di Viviverde Coop.
Lì sono in versione vegan, io non avevo alcuni elementi e li ho adattati :) Enjoy

Per 4 muffin:
  • 40gr farina 00 (io integrale)
  • 40gr fecola
  • 40gr farina mandorle (io granella di mandorle)
  • 40gr joghurt soia (io greco)
  • 25 ml olio semi
  • 4gr lievito per dolci
  • un pizzico di semi di vaniglia
  • scorza di 1/2 limone bio
  • 1 cucchiaio latte soia (io latte no lattosio)
  • 75gr carote (1 carota grande)


Gratuggiate la carota, meglio se finemente, aggiungete in una terrina le farine, l'olio, lo yoghurt ed il latte. Mescolate bene con una paletta di silicone. Aggiungete la scorza di limone e la vaniglia. Alla fine aggiungete il lievito per dolci ed un pizzico di sale.
Dividete in 4 pirottini e cuocete in forno per 45' a 180°C finchè non saranno dorati e ben cotti. Deliziosi! Da provare come impasto base per altri muffin, o aumentando le dosi per farne 8 ed oltre.

Finally home! Time to write on the blog again, relax, enjoy sunshine and write my final project for the master degree. 
Work in Milan has been a terrible experience but new things are coming so I'm thrilled, you know great changes are always preceded by chaos and in a sort of way I'm enjoyng this chaos.
In the past weeks, ehm ok months I did'nt have time to update the blog but now I'm back to what seems to be something that people appreciate :)
So yesterday I fought laziness and I've baked those delicious muffins that had a great success on Istangram, vegan, fluffy and moist they are perfect for breakfast or simply if you want to have a sweet break at work with your colleagues!


The ingredients are perfect for 4 of them, simply double it to make 8 or more

Ingredients:
  • 40gr weath flour
  • 40gr almond flour
  • 40gr corn starch
  • 4gr yeast (powder)
  • 25ml sunflower oil
  • 1 organic lemon zest
  • 75gr grated carrots
  • 40gr soy yoghurt
  • 2Tbs veg milk


In a bowl simply mix the flours, add the grated carrots and the lemon zest.add oil, yoghurt and milk. In the end add the yeast and a ppinch of salt, stir it and divide it in 4 muffin cases.
Bake in preheated oven for 45' to 180°C or until they are golden and well baked. Always check with a toothpick :)
Enjoy them by the sunshine with a cup of strong black coffee.
